脂肪酶可见于胰腺分泌物中。这类酶都具有相似的α和β水解酶折叠方式。皱褶假丝酵母(Candida rugosa)可产生多种脂肪酶同工酶,序列同源性达80%。

應用

脂肪酶在工业上用于手性化合物的拆分和生物柴油的酯交换生产。
脂肪酶(来自皱褶假丝酵母)已用于:
  • 合成葡聚糖脂肪酸酯
  • 研究在葵花籽油和蓖麻油存在下,脂肪酶对共轭亚油酸(CLA1和CLA2)生产的影响
