一般說明
作为脂质运载蛋白家族的一员，βLg是由162个氨基酸组成的小分子蛋白质，分子量∼18,400 Da，具有八链β-桶状（链 A-H）结构，后接一个含有3转角的α-螺旋和构成一部分二聚化界面的最后一条β-链（链 I）。
奶牛乳汁中含有蛋白质 β-乳球蛋白 (BLG)。它天然存在于一些遗传变异中，最普遍的牛变异称为 BLG A 和 BLG B。
應用
β-乳球蛋白用于通过等电聚焦电泳法鉴定牛奶中的κ-酪蛋白的遗传变异体。
β牛奶β-乳球蛋白已用于：
- 作为校准剂校准TriWave设备。
- 作为标准品，用于通过反相高效液相色谱(HPLC)检测和定量牛奶中的β-乳球蛋白

生化／生理作用
ββ-乳球蛋白(β-lg)具有热致凝胶化特性。它还具有抗病毒、抗癌和降胆固醇作用。ββ-乳球蛋白可结合视黄醇和长链脂肪酸，参与脂肪酸的吸收和代谢。
