大豆粉は、マメ科植物の大豆から生成されます。9種類の必須アミノ酸の原料で、少量の炭水化物と脂質を含有します。大豆粉は優れたタンパク源です。さまざまな生物学的利用が可能で、これに含まれるイソフラボンは心血管障害を抑えます。
アプリケーション
大豆粉は以下の用途に使用されています：
- トリトンX-114（TX-114）ベースのリポ多糖体（LPS）抽出物の最適化のため
- ルーメン液のin vitro発酵におけるタンパク質補給剤として
- ウシ消化物の分解を評価するためのバッチ培養におけるタンパク質補給剤として
脱脂された、緩徐に利用可能なタンパク質栄養素。
生物化学的／生理学的作用
大豆粉が発がん性でラットに膵臓がんを誘発し得ることを示した研究もあります。
