イヌリナーゼは、エキソイヌリナーゼとエンドイヌリナーゼに分類されます。
アプリケーション
Aspergillus niger由来イヌリナーゼは、多微生物性ウェルプレートモデルを用いて微生物膜から細菌（P. aeruginosaとS. aureus）を分散させる可能性について調べるためのグリコシド加水分解酵素（GH）として使用されています。
生物化学的／生理学的作用
イヌリナーゼは、治療用途をもつ高果糖シロップで使用されます。イヌリナーゼは、スクロースに対して高い活性をもつことが報告されています。
イヌリナーゼはイヌリンを加水分解し、オリゴ糖を生成してフルクトースを遊離します。また、フルクトースの末端単位をスクロースとラフィノースに分割します。
単位の定義
1 unitは、pH 4.1、37°C、1分間で、1 μmoleの還元糖(フルクトースで測定)を遊離させる酵素量に相当します。
