應用
在一项研究中使用了来自牛胰腺的 α-糜蛋白酶，以研究通过 Winsor-III 微乳液系统提取蛋白质。来自牛胰腺的 α-胰凝乳蛋白酶也被用于研究胰蛋白酶的一种新的基于富勒烯的特异性荧光探针。
该产品已被用于研究几种醚低聚物对酶的抑制作用。它也被用于裂解酚氧化酶前体，顺序估算血淋巴中的总酚氧化酶。此外，在使用 Deraeocoris nigritulus 的唾液腺和前中肠提取物的糜蛋白酶试验中，将该酶用作阳性对照。
生化／生理作用
α-糜蛋白酶是一种丝氨酸肽酶，在由二硫键连接的三条多肽链（a 链-13 残基、B 链-131 残基和 C 链-97 残基）中含有 241 个氨基酸残基。发现该酶的分子量为 25 kDa。其 pI 为 8.75。选择性水解酪氨酸、苯丙氨酸、色氨酸和亮氨酸 C 末端的肽键。ca2+ 激活并稳定酶。该酶被二异丙基氟磷酸盐 (DFP)、苯甲基磺酰氟 (PMSF)、N-对甲苯磺酰基-L-苯丙氨酸氯甲基酮 (TPCK)、糜蛋白酶抑制剂、抑肽酶、α10-抗胰蛋白酶、α2-巨球蛋白、10 mM cu2 + 和 hg2 + 抑制。
