La carnitina è un′ammina quaternaria naturalmente presente nella maggior parte dei tessuti di mammifero. È presente in concentrazioni relativamente elevate nei muscoli scheletrici e nel cuore, dove è coinvolta nella regolazione del metabolismo energetico. Sposta il metabolismo del glucosio dalla glicolisi all′immagazzinamento del glicogeno e potenzia il trasporto degli acidi grassi a catena lunga nei mitocondri, dove vengono ossidati per produrre energia.
