General description

β-Ionone, an end ring analog of β-carotene, is a volatile carotenoid that contributes to the fragrance in many flowers, including petunia (Petunia hybrida).

Application

β-Ionone may be used as a reference standard in the determination of β-ionone in wine using solid-phase extraction followed by gas chromatography with mass spectrometry (GC-MS).
