アフラトキシンB1は、最も毒性の高いアフラトキシンです。 アフラトキシンは肝毒性代謝物で、 Aspergillus flavusやAspergillus parasiticusなどのカビにより産生されます。 アフラトキシンは人間の食物や動物の飼料に混入します。 肝臓がん、 免疫機能の低下、成長速度の低下、飼料効率の低下、および死亡と関連しています。 自然発生する有毒発がん物質であり、最もよく知られているマイコトキシンです。主に果物、野菜、および穀物に混入します。
アプリケーション
Aspergillus flavus（黄色コウジ菌）由来のアフラトキシンB1-BSA複合体は、ファージや合成ペプチドでマウスを免疫化する際に使用されてきました。 また、Si電界効果トランジスタ（FET）バイオセンシング法における標的分子としても使用されます。
アフラトキシンB1は、p53腫瘍抑制遺伝子のコドン249でGからTへのトランスバージョンを引き起こす発がん性化合物です。
