生化／生理作用

淀粉是由葡萄糖单位通过糖苷键连接而成的碳水化合物。马铃薯淀粉的未消化部分称为抗性淀粉 (RS)。抗性淀粉 RS4 可降低 Wistar 大鼠血清中总胆固醇和甘油三酯的浓度，并增强高密度脂蛋白胆固醇的浓度。
