生化/生理作用

酪蛋白因乳化、起泡、凝胶化、持水能力以及通过官能团与生物活性分子相互作用等特性,被应用于营养食品和各种配方,如水凝胶、薄膜、纳米胶束和纳米颗粒。这种蛋白质很容易获得,可以保护药物不被酶降解,而且无毒,因此酪蛋白有可能用于口服给药系统。
