General description
Peroxide is an all purpose disinfectant which, due to its excellent antiviral, bactericidal and fungicidal action, is widely used in the food industry. Peroxidase transfers peroxide oxygen to an organic redox indicator. This produces a yellow-brown oxidation product. The peroxide concentration is measured semiquantitatively by visual comparison of the reaction zone of the test strip with the fields of a color scale. Each strip also features a second reaction zone (alert zone). This zone changes color in the presence of high peroxide concentrations (from approx. 2000 mg/l (H2O2) on) and of interfering concentrations of peracetic acid. The test strips are perfect for pre-testing a sample in an economic and quick way to estimate the peroxide concentration and a possible dilution factor prior to using a quantitative method such as a Reflectoquant® or Spectroquant® Peroxide test.

Application
- Food Quality Control: In the food industry, peroxide tests are used to determine the peroxide value in vegetable oils and other edible fats. This application is crucial for assessing the freshness and shelf life of food products. A recent study demonstrated the use of paper-based analytical devices for the colorimetric determination of peroxide values in vegetable oils, highlighting the simplicity and effectiveness of this method for routine food quality testing (Ghohestani et al., Food Chemistry, 2023).
