生化/生理作用

牛乳脂蛋白脂酶(LPL)具有最高的脂解活性。它与酪蛋白胶束有关。LPL调节甘油三酯利用度,具有位点特异性。脂酶通常催化甘油三酯的脂裂解,尤其是甘油三酯sn-1和sn-3位的脂肪酸。
