應用

来自Glycine max (大豆)的脂氧酶(也称脂肪氧合酶)已被用于修饰从人血浆中分离的低密度脂蛋白。
大豆酶将使用花生四烯酸作为底物,以亚油酸作为底物的活性约为 15%;花生四烯酸氧化的产物是 12-或 15-过氧化氢花生四烯酸(12-HPETE 或 15-HPETE)。
