應用

α来自牛乳的-酪蛋白是属于酪蛋白磷蛋白家族的免疫球蛋白E(IgE)结合表位。由于α-酪蛋白抗体与胰岛素之间的强交叉反应性,它已被用于儿童胰岛素依赖型糖尿病(IDDM)的研究中。对表现出(IDDM)症状儿童的研究表明,他们相对于对照组同胞的α-酪蛋白抗体水平更高,而这可能是IDDM的一种风险标志物。

生化/生理作用

酪蛋白中的磷酸丝氨酸簇可螯合铁并降低其生物利用度。酪蛋白的部分酶消化可将磷酸化的残基暴露给碱性磷酸酶,从而实现去磷酸化并提高铁的生物利用度。
