据报告,没食子酸辛酯(3,4,5-三羟基苯甲酸酯)对酿酒酵母拜氏接合酵母具有抗真菌活性。与没食子酸辛酯相关的杀菌活性是由于其充当非离子表面活性剂(表面活性剂)的能力。据报告,没食子酸辛酯(一种没食子酸烷基酯)对金黄色葡萄球菌BB568具有直接的抗菌活性。据报告其可抑制大豆脂氧合酶-1(EC 1.13.11.12,I型)的活性,IC50为1.3 μM。对防止脂质过氧化也有效。

應用
