本品用于定量酶法测定食物和其他物质中的果糖。己糖激酶催化三磷酸腺苷 (ATP) 磷酰化果糖。磷酸葡萄糖异构酶 (PGI) 将果糖-6-磷酸转化为葡萄糖-6-磷酸。然后葡萄糖六磷酸脱氢酶 (G6PDH) 在烟酰胺腺嘌呤二核苷酸 (NAD) 的存在下催化 6-磷酸葡萄糖 (G6P) 氧化为 6-磷酸葡萄糖酸酯。在此氧化过程中,等摩尔的 NAD 被还原为 NADH。在 340nm 处增加的吸收值与葡萄糖浓度直接成正比。
