General description

Dextran is an extracellular bacterial polymer of D-glucopyranose. It primarily consists of α-(1→6) linkage in the main chain and a variable amount of α-(1→2), α-(1→3), α-(1→4) branched linkages.

Application

Dextran from Leuconostoc spp. has been used:
  • for the isolation of islets from pancreatic tissue by centrifugation
  • as a component of Earle′s bicarbonate buffer for placental perfusion
  • for the isolation of rat brain microvessels

Biochem/physiol Actions

Dextran is a, which is commercially used as a drug, particularly as a blood plasma volume expander. It is used as an adjuvant, emulsifier, carrier, and stabilizer in the food, pharmaceutical, and chemical industries. Sephadex, a cross-linked dextran is broadly used for the separation and purification of protein. In the food industry, dextran found its use as a thickener for jam and ice cream. It inhibits the crystallization of sugar, thereby enhancing moisture retention. This helps in maintaining the flavor and appearance of various food items.
