丙酮酸是代谢中的中心分子,其通过多种代谢途径进行使用和合成,其中包括糖酵解和丙氨酸的氨基转移作用。丙酮酸可在柠檬酸循环中进一步氧化,在糖异生期间转化为碳水化合物,或还原为乳酸。高水平的丙酮酸与肝脏疾病和遗传性疾病有关。丙酮酸也被用于刺激代谢,从而导致体重减轻。

原則
由偶联酶测定法测定丙酮酸浓度,得到的比色(570nm)/荧光(λex = 535/λem =587 nm)产物与存在丙酮酸成比例。
