β-来自酪蛋白牛乳,是免疫球蛋白E(IgE)结合表位,属于分泌性钙结合磷蛋白家族。它由209个氨基酸和五个磷酸基团组成。β-酪蛋白在C-末端具有球状疏水结构域,在N末端和脯氨酸残基具有高度溶剂化和带电荷的结构域。

應用

β-酪蛋白来自牛乳,已用作蛋白水解测定中的蛋白底物。它还已用于将聚丙烯酰胺凝胶嵌入β-酪蛋白酶谱中。
