酪蛋白占牛奶总蛋白的80%。κ-酪蛋白是牛奶中主要的过敏原之一。它是由半乳糖、半乳糖胺和唾液酸组成的糖基化蛋白。以三糖或四糖形式存在,根据连接的寡糖数目表现为不同的亚型。κ-酪蛋白具有疏水性N末端和亲水性C末端区域。

應用

κ-酪蛋白(来源于牛奶)已用于:
  • 作为标准品定量分析酪蛋白浓度,评估菌株水解HM Mozzarella奶酪中酪蛋白的能力
  • 制备LPS缺失母牛牛奶蛋白质以用于淋巴细胞增殖检测
  • 作为反相高效液相色谱法(RP-HPLC)标准品,用于定量分析脱脂牛奶样本中的κ-酪蛋白浓度

生化/生理作用

κ-酪蛋白(来自牛乳)是属于酪蛋白磷蛋白家族的免疫球蛋白E(IgE)结合表位。κ-酪蛋白对酪蛋白胶束悬液的静电和空间稳定性具有重要作用。它可抗钙沉淀,因此可稳定其他酪蛋白。κ-酪蛋白一直是通过基因修饰制造低苯丙氨酸牛奶的研究对象,这对患有苯丙酮尿症(PKU)等代谢性疾病的患者很重要。
