生化／生理作用
青豆胰蛋白酶抑制剂属于蛋白酶抑制剂的 Bowman-Birk 家族。分子量为 9 kDa，含有 9 个二硫键，热稳定性高。具有胰蛋白酶和糜蛋白酶结合子域。
物理性質
单体的表观分子量约为 9,000 Da，但发生浓缩和 pH 依赖性二聚化。
單位定義
在25℃、pH 7.6条件下，反应体积为3.2 mL、光程为1 cm时，以BAEE为底物，一单位胰蛋白酶每分钟可产生0.001的 Δa253 。
