In this application, headspace SPME (HS-SPME) using a Carboxen/PDMS/DVB fiber coupled with gas chromatography-mass spectrometry (GC/MS) was used for the characterization of the volatile fraction of honey samples. Using SPME it was possible to obtain and distinguish the chemical fingerprints of different types of honey. The relatively polar SUPELCOWAX 10 GC column provides excellent separation of these polar compounds.
