General description

Gelatin derived from cold water fish skin has low gelling and melting points. This gelatin will not gel at 10 degree celsius, hence they do not have bloom strength.

Application

Gelatin from cold water fish skin has been used in the preparation of water phase. It has also been used to maintain growth in static culture and in flavopiridol treatment and transcript labeling.
Used as a blocking agent in immunochemistry.

Biochem/physiol Actions

Gelatin from fish skin can be used in the preparation of various gels based on their gelling characteristics. It can also be used as an additive in surimi processing to enhance the functional and mechanical properties of gel.
