應用

生化/生理作用

菊粉酶用于高果糖糖浆,具有治疗用途。据报道菊粉酶对蔗糖有很高的活性。
菊粉酶水解菊粉,产生寡糖并释放果糖。它还能将蔗糖和棉子糖的末端果糖单元分离。

單位定義

1个酶活力单位(U)相当于在pH 4.1和37°C下每分钟从菊粉中释放1 μmol还原糖(按果糖测量)所需的酶量
