Thioether S-methyltransferase is an important enzyme in the metabolism of sulfur and selenium-containing compounds in animals. Ethyl vinyl sulfide was previously shown to be a substrate for this enzyme yielding methyl ethyl vinyl sulfonium ion (MEVS+) upon reaction with S-adenosylmethionine.
