General description

delta-Decalactone is a six-membered, 10-carbon cyclic monoester, which generally exists in two isomeric forms, R- and S. It is an aroma component with a sweet and milky odor. delta-Decalactone is also employed in dairy and food products for its characteristic fruity flavor.(5)

Application

delta-Decalactone may be used as an analytical standard for the quantification of the analyte in the following:
  • In yogurt using gas chromatography-mass spectrometry (GC-MS).
  • In sweet whey powder using gas chromatography/olfactometry (GC-O) and gas chromatography/mass spectrometry (GC-MS).
