General description
Octyl gallate is an ester of gallic acid which is generally used as an antioxidant in food and pharmaceutical industries. It can act against the oxidative damage caused by reactive oxygen species (ROS) in the form of hydroxyl radicals or hydrogen peroxides, and reactive sulfur species (RSS)
This substance is listed on the positive list of the EU regulation 10/2011 for plastics intended to come into contact with food.
Application
Octyl gallate may be used as a reference standard for the determination of octyl gallate in
- edible vegetable oil by high performance liquid chromatography/time-of-flight mass spectrometry (HPLC/TOF-MS) as well as alternating penalty trilinear decomposition (APTLD) combined with HPLC-diode array detection (DAD)
- dry foods by reversed-phase HPLC with photodiode array (PDA) detection.
