General description

Lipase, a versatile enzyme is found in animals, plants, and various microorganisms. It is considered as nature′s catalysts and is stable. C. antarctica lipase A (CALA) and C. antarctica lipase B (CALB) are the two types of lipases produced by Candida antarctica. CALA is a thermostable protein, that is mostly stable at acidic pH. CALB is stable at alkaline pH. CALA and CALB are extremely stable in their immobilized state and can be employed at high temperatures for long hours without losing their activity.

Biochem/physiol Actions

Lipases are capable of hydrolyzing fats into fatty acids and glycerols at the water-lipid interface and can reverse the activity in non-aqueous conditions. Microbial lipases are mostly used in various industrial or commercial applications. CALA may be particularly useful for the conversion of heavily branched substrates. CALA has a distinct activity for sterically hindered alcohols, especially tertiary alcohols. CALB possesses a wide range of substrate specificity, both in terms of regio- and enantioselectivity.
